Berry Pink Cheesecake

So it’s Valentine’s day. As opposed to eating out tonight, hubby and I are going to sip champagne and cook dinner together. That may not sound revolutionary, but it is.  I live in my kitchen and am not good at sharing it – but what better way is there to show my love than challenging myself to change?  We are going to get creative with our new purchase: the Vitamix 6300. We are even making a spicy green soup with it. Yes, you heard me correctly: we will be making soup in our blender.

Even though we will be cooking together, I couldn’t help making these decadent pink desserts.  They were just too beautiful.  They take about 25 mins to put together and another 1-2 hours to freeze (they are no-bake), so you still have time if you want to whip some up tonight.

Strawberry Lemon(ade) Cake

Although there is not actually any lemonade in this cake, I loved the way the title sounded. Thus my strawberry lemon cake became a strawberry lemon(ade) [sic] cake.


Despite its overwhelmingly commercial elements, I love Valentine’s day: making crafty cards, baking cute treats, having an excuse to use pink excessively. However no matter what I do, I can’t get hubby into it.  This year’s the year though -I’m sure 11th time’s  the charm!

If you want something special for your Valentine’s day, this cake is for you. It is a true labor of love, but it’s worth every minute.

Last Minute Veggie Valentine’s

Did you forget it was Valentine’s day tomorrow?  Need to make a quick, yet beautiful, card?

Ok. Take a deep breath and open up your vegetable crisper.

I know. Not your typical place to find crafty items, but your average vegetables can be turned into beautiful flower stamps.  I got the idea when I was making the most delicious pasta e fagioli last week (more on that later).  As I was chopping the celery, I noticed something:

The celery was shaped like a perfect rose.  As a teacher, I try and make small Valentine’s day bookmarks for all of my students.  I immediately got out my stamp pads and some card stock.

So I know this is technically a cooking blog, but I wanted to share this simple trick – in case you need to scramble at the last moment.


Bunch of celery (or brussels sprouts, small head of cabbage, or any other vegetable with similar leaf configuration)

stamp pad (I used red)

card stock or blank stationary cards


Evenly slice celery bunch (or other veggie) about 3 inches from base.  Make sure you have a very flat cut, as this will be your stamp.  Put cut side down on a paper towel to dry for about 5 mins.

Evenly coat your new stamp with ink.  Press firmly on card.  Repeat.

If you have more than one type of vegetable, you can vary the size of your flowers. My celery needed a little extra support, so I also wrapped a rubber band around it.
