Gluten Free Granola

Without breakfast, I’m a grumpy maniac (with a rumbly belly). Unfortunately making time for breakfast has not always been my strong suit. Between marathon training and trying to run out the door, my eating can take a back seat.  This week has been about finding easy and delicious breakfasts that don’t leave me resorting to my emergency Kind bar purse stash. This granola fills the bill for a quick meal on my way out and can be stored in bags for on-the-go eating.

 

Ingredients:

1.5 cups puffed millet

1/2 cup raw almonds

1/4 cup raw sunflower seeds

1/4 cup raw pepitas (pumpkin seeds)

1 Tbsp chia seeds

1/4 cup dried fruit (I used TJ’s Golden Berry Blend)

1-2 Tbsp agave

Directions:

Preheat oven to 300 degrees.  Mix ingredients together and add agave to taste.  Spread evenly on foil lined baking sheet and toss every 10 mins until golden, approximately 40 minutes.

Eat plain, with yogurt, or however you normally enjoy cereal or granola!
