Roasted Beets

Beets are one of my favorite vegetables. It could be because my grandmother loves them so much or perhaps its the vibrant pink they turn everything they touch. Considered a “super food,” the beet is not only good for you – its sweet and delicious to boot!

You can boil beets, but roasting them brings out their flavor and ensures that all their nutritious goodness stays in them for you to enjoy.  It takes a little time, but it is well worth the wait.


Preheat oven to 375 degrees.

Scrub beets.  Put on foil and drizzle with olive oil.  Fold foil to create a tight pouch.  Bake until soft, 45 mins to an hour (depending on size of beets).

Let cool and then peel off skin.  If it doesn’t slip off, use a knife to help you remove it.

Then, use in your favorite recipe! I’ll be sure to add some beet related recipes soon. I just chopped these and put them in a salad with goat cheese, spinach, sunflower seeds and a little basalmic vinegar.
