Oven Baked Sweet Potato Fries

Not only is this root vegetable incredibly tasty, it is good for you too!  Rich with antioxidants and vitamins, this potato has a low glycemic index that has even been shown to help regulate blood sugar. I absolutely adore it and have been eagerly awaiting its arrival in my CSA pickup.  You can’t imagine my delight when I showed up last week to get 3 lbs (!) of small sweet potatoes.  Yum.

This is my absolute FAVORITE way to make them.  These oven fries are delicious, easy to make, and don’t use a ton of oil.  They go great with anything, but if I’m in a hurry I love whipping up a salad and baking a frozen black bean veggie burger (The Morningstar Chipotle ones are pretty tasty).

 

Ingredients:

Sweet potatoes cut in half and in small slices

Oil spray

Kosher salt

Cumin

Red chili powder (optional)

Evenly coat the potatoes with seasoning and oil

Directions:

Preheat your oven to 400 degrees.

Line a cookie sheet with foil and spray with olive oil spray.  Lay down sweet potatoes, spray with more oil, and sprinkle with cumin, chili powder, and kosher salt.  Toss to combine.

Bake for 20-30 minutes (until golden and slightly crispy), turning once.  Serve with ketchup and Sriracha

These are amazing, quick, and easy!
