White Crudite with Buttermilk and Green Goddess Dressings

1 Jan

Buttermilk Dressing
1 cup low-fat buttermilk
1 cup creme fraiche
1/2 cup sour cream
1/2 cup coarsely chopped fresh dill
1 1/4 teaspoons coarse salt
1/4 teaspoon freshly ground pepper
1/4 teaspoon finely grated lemon zest
1 1/2 tablespoons fresh lemon juice
Pinch of cayenne pepper (I use a heavy hand with this

Combine ingredients, cover, and refrigerate for up to 1 day

Green Goddess Dressing
1/2 C sour cream
1 C mayonnaise
1/4 c green onion minced
3 Tblsp fresh chopped dill
3 Tblsp fresh chopped basil
2 Tblsp lemon juice
1 Tsp white balsamic vinegar
pinch salt, 1/4 tsp black pepper

Combine, mix well, refrigerate

Serve dips with light colored crudites – I used white asparagus (peeled and blanched), hearts of romaine, cucumber spears, and endive, for serving

The buttermilk dressing recipe is borrowed from Martha Stewart.  The Green Goddess Dressing is a modified version of the Range Cafe’s Green Goddess dressing in Abq, NM.  I followed Martha’s advice and served this on a silver tray with mint julep cups to hold the veggies.  It was a beautiful and elegant presentation!
