Scallions and Chive Goat Cheese Ball

This is adapted from a Martha Stewart recipe.  It is light and delicious tasting and was rapidly consumed (especially by my husband).

2.5 tablespoons unsalted butter, softened
1 packages (8-ounce) cream cheese or Neufchâtel
2 teaspoons freshly squeezed lemon juice
2 dashes Worcestershire sauce
2 dashes hot sauce, preferable Tabasco
Dash coarse salt
dash freshly ground white pepper
8-10 ounces goat cheese
3 tablespoons finely chopped scallions
freeze dried chives
1 English cucumber, cut into 1/8-inch slices, for serving

In the bowl of an electric mixer fitted with the paddle attachment, combine butter, cream cheese, lemon juice, Worcestershire sauce, hot sauce, salt, and pepper; mix on medium speed until combined. Stir goat cheese and scallions and form into a ball. If not using immediately, you can refrigerate up to 3 days or freeze up to 1 month. Roll in chives to coat before serving. Serve with cucumber slices.
